Sweet & Sour Meatballs

Sweet and Sour Meatballs; A Super Bowl Party RecipePineapple, which was brought back to Spain by Christopher Columbus after his voyages to the new world, symbolizes hospitality, welcome and good cheer. West Indians of the Caribbean would hang pineapples outside of their huts to indicate that they were open to receiving visitors. In Colonial America hostesses would prominently display pineapples in the dinning room as a way of welcoming their guests into their homes. Serve this dish as a warm and tasty welcome to your friends and family at your Super Bowl Party.
These meatballs can be eaten on their own or served along with a bowl of rice or pasta. This recipe can be made with either ground turkey or ground beef depending on your personal preference. This recipe makes approximately 30 meatballs. If you are expecting a large crowd at your Super Bowl Party this recipe can easily be doubled.
Recipe for the meatballs:
1 pound ground turkey or ground beef
2 tablespoons fresh parsley - minced
1 teaspoon freshly grated ginger
1 tablespoon teriyaki sauce
1 egg - beaten
1/2 cup dry, unseasoned bread crumbs
Directions for the meatballs:
1. Preheat your oven to 350 degrees.
2. In a large bowl add all the ingredients and mix well.
3. Use a level tablespoon of the mixture and form into meatballs.
4. Place the meatballs onto a cookie sheet that has been coated with non-stick cooking spray.
5. Place the sheet in the oven and bake for 20 minutes.
6. Serve the meatballs along with the sweet and sour sauce.
Recipe for the sweet and sour sauce:
2 tablespoons butter
1/2 cup red bell pepper - seeded and diced
1/4 cup green bell pepper - seeded and diced
1/4 cup green onions - sliced
1 teaspoon freshly grated ginger
2 teaspoons chicken bouillon powder
1/2 cup cider vinegar
3/4 cup water
3/4 cup pineapple juice
1/4 cup honey
1/2 cup granulated sugar
3 tablespoons cornstarch
3 tablespoons teriyaki sauce
One (20 ounce) can pineapple chunks (drained reserving 3/4 cup of the pineapple juice as mentioned above)
2 tablespoons fresh parsley - minced
Directions for the Sweet & Sour Sauce:
1. Melt the butter in a medium sauce pan.
