How to Make One Pack of Chicken Breasts Last All Week

Take a little bit and make it go a long way. That's my philosophy when dealing with meats. I have become especially good at stretching chicken breast through several meals. Here is how I make one pack of chicken breasts last all week.

Step 1 of making one pack of chicken breasts last all week: Purchase a pack of chicken breasts, with one piece of chicken for each family member. So for my family, I purchase a pack of four chicken breasts. These chicken breasts should be on the bone and with skin. This is going to be your lowest price per pound.

Step 2 of making one pack of chicken breasts last all week: When you get your chicken home, you need to cut it up. Using a sharp knife, cut the chicken breasts from the bone. You should get one big piece and one small chicken strip size piece per breast, plus there should still be a tiny piece of meat left on the bone. Pull the skin off the chicken breast and save it.

Step 3 of making one pack of chicken breasts last all week: Take 2 of your chicken breasts and butterfly them. To do this, you slice chicken in half (thickness-wise). If you leave it partially attached on the side, it will resemble a butterfly. Separate them completely, hammer them flat, and you have four chicken cutlets to make chicken parmesan. (meal 1)

Step 4 of making one pack of chicken breasts last all week: Take another chicken breast and cut it into thin strips. Also, add any chicken strips that you got when you separated the chicken from the bone. Batter and season your chicken strips and fry them. Then cut them up into bite size pieces and serve on top of your salad. (meal 2)

Step 5 of making one pack of chicken breasts last all week: Take your final chicken breast and boil it until it is done. Then with a fork, shred the chicken breast and mix it with celery, relish, onions, mayonnaise and your favorite seasonings, for a yummy chicken salad dinner. (meal 3)

This is a great way to present the stretching of chicken into an all week event. I often do the same thing with one pack of chicken. But instead, I use the chicken to make huge casserole or one-pot dishes like Sante Fe rice, or some other variety. This was a really good article!

Very interesting ideas! They don't sell chicken breasts on the bone by me but they do frequently put "family size" (larger) packages of boneless ones on sale, so I'll try some of your ideas next time that happens.
