St. Patty's Day Recipes
Irish Potatoes
Ingredients Needed :
1/4 cup softened butter
4 ounces cream cheese softened
1 teaspoon vanilla extract
2 1/2 sweetened flaked coconut
ground cinnamon
1 (16 ounce) package confectioners sugar
Directions
In a large bowl cream together the butter and the cream cheese
Add the vanilla and the confectioners sugar
Beat until all the ingredients are combined
Stir in the coconut, mix together using a spoon
Roll the mixture between your hands to form small potato shaped candies, also just shaping them into a ball looks really nice
Place cinnamon into a shallow dish and roll the balls into it or place cinnamon into a zip lock bag, add the balls andd gently shake them in the bad, The bag technique is really fun and less messier if you have young kids helping you with this recipe.
Place the balls into the refridge and let chill for one hour
If you want dirtier balls roll them into the cinnamon a second time after they have chilled for an hour
They are ready to eat after they have chilled for an hour, but will taste much better after they have sat for 12 - 24 hours.
This is also a really good recipe for coconut easter eggs, but instead of rolling the balls into the cinnamon to finish you will now dip them into melted chocolate.
This recipe makes about 4 dozen Irish Potatoes. If this seems like too many for your family you could always cut the recipe in half to make about 2 dozen instead.
Green Beer
Ingredients
* One 12 ounce Beer - any beer will work but the lighter the beer the better the green
* Green food coloring - 3-4 drops
Directions
Add one drop of green food coloring to your glass. Pour the beer into the glass.
That's it! This works for any beer. Darker beers like stout will have a nice green head atop their normally dark bodies.
These are all recipes that mom gave me a few years back, hope you all enjoy them as much as my family does.
