Bubble Tea originated in Taiwan in the 1980's. A concession owner set up a stand in front of an elementary school and became popular by adding different fruit flavor to the tea. For the tea and the flavoring to get the full effect it needed to be shaken well, which formed bubbles in the drink. In 1983 Tapioca pearls were introduced by Liu Han-Chieh.
Bubble tea is usually served with black tapioca pearls sitting at the bottom of a clear cup. The tapioca pearls can also be white or transparent. A huge straw accompanies the drink so that the pearls can be sucked up from the bottom and eaten. The consistency of the pearls usually has a slightly softer texture then bubble gum, but the consistency can also vary.
