Common Substitutions for Cooking Ingredients
Many cooks have come across the problem of not having an ingredient handy for a recipe that you want to make right away. Sometimes it's just not practical to run out for one item. Here is a list of ingredient substitutions. Remember, when you substitute an ingredient it can result in a dish that is somewhat different from the original recipe in flavor, texture, color or consistency. Recipes should always be thought of as a guideline for achieving a dish. Inconsistency in cooking is inevitable due to changes in temperatures, freshness of ingredients, availability or brand of ingredients all play a factor in the outcome of a recipe. Sometimes health reasons make it necessary to find substitute ingredients in which case you will have to find what works best for you.
1 tsp. Allspice = ½ tsp. cinnamon and ½ tsp. ground cloves
1 tsp. Apple Pie Spice = ½ tsp. cinnamon, ¼ tsp. nutmeg and 1/8 tsp. cardamom
1 1/5 tsp. Arrowroot Starch = 1 Tbsp. flour OR 1 ½ tsp. cornstarch
1 tsp. Baking Powder = 1/3 tsp. baking soda and ½ tsp. cream of tartar OR ¼ tsp. baking soda and ½ cup sour milk or buttermilk (decrease liquid called for in recipe by ½ cup).
1 cup Buttermilk = 1 cup plain yogurt or add 1 Tbsp. vinegar or lemon juice to regular milk to make 1 cup OR cup sweet milk and 1 ¾ tsp. cream of tartar.
2 tsp. Chives = 2 tsp. green onion tops, chopped fine
Chocolate = Carob has long been a healthful substitute for chocolate and is pretty available now. Carob can usually be substituted using the same amount however you may have to play around with the sweetening a little bit because carob is less bitter than unsweetened chocolate.
1 cup Corn Syrup = 1 cup sugar and ¼ cup liquid (use whatever liquid is called for in recipe OR 1 cup honey.
1 Tbsp. Cornstarch = 2 Tbsp. all-purpose flour OR 2 Tbsp. granular tapioca.
¾ cup Cracker Crumbs = 1 cup dry bread crumbs.
1 cup Cream or Half-and-Half = 7 /8 cup milk and ½ Tbsp. butter or margarine (For cooking or baking).
1 cup Cream, Heavy = ¾ cup milk and 1/3 cup butter or margarine. (For cooking or baking).
