Quick and Easy Fix Meals and No Fuss Desserts

Preparing your family a good hot tasty meal does not have to be a time consuming task. You can even whip up a yummy dessert in a snap.

Fried Potato and Egg Scramble
This is a satisfyingand tasty meal for anytime of day.

All you need to do to prepare this is to peel about three to four medium potatoes and slice them up any way you wish. Fry them as usual and after they are browned, transfer the potatoes on to a paper towel lined plate and set aside. Pour the cooking oil from the pan out and discard. In a small bowl, crack about three to four eggs and whisk till blended well. Dice up one half of a red and green bell pepper and add to the beaten eggs.

In the same skillet that the potatoes were cooked in place the skillet back on the stove top and over medium heat melt the butter and once the butter is ready add your eggs and bell peppers. Scramble the eggs and add the potatoes and stir until well blended.

This dish is yummy by itself or you can spoon some of the mixture inside a warm flour tortilla. Salsa is a great topping that goes well with this and you can also sprinkle some sharp cheddar cheese on top.

Tortilla Soup
This is an excellent dish to serve on these cold winter days. Here is all you need to prepare this yummy soup.

One or two pounds of ground sirloin
One package Taco Seasoning
One 15 ounce can of Corn
One 15 can of Ranch Style Beans
One small can Diced Green Chiles
Two 15 ounce cans of Rotelle Tomatoes
Tortilla Chips
Asadero Cheese ( this is a mild Mexican cheese that melts wonderfully)

Brown the ground meat in a skillet until well done. Drain and set aside.
In a large soup pan empty all of the above ingredients with two cans of water and mix well. Add the browned ground beef and stir well. Cook over high heat until soup begins to boil then turn the burner down to low and cover the soup with a lid and simmer for twenty minutes.
When the soup is ready to serve, spoon into soup bowls and top with tortilla chips and add a few small hunks of the Asadera Cheese to the soup while the soup is still hot.

Beef Surprise
This is so simple to make and is yummy to the taste buds.
