Chicken Tortilla Bake
Mexican Food Recipe
This is one food dish you can't find at the corner Mexican Restaurant! (At least, not where I live.) This bake is delicious and perfect for a small family. It goes great with rice and refried beans on the side.
You will need the following ingredients for this yummy Chicken Tortilla Bake:
1 12 ounce bag of corn tortilla chips
4 cups of cooked chicken, chopped or pulled
1 10.5 ounce can cream of chicken soup
1 7 ounce can of diced green chiles, undrained
Green onions, chopped
3 cups of shredded Colby cheese
1 2.5 ounce can of black olives (optional)
To make this dish:
(1) Preheat oven to 375.
(2) Place half on the tortillas in the bottom of a medium sized baking dish.
(3) In a large bowl, mix together the chicken, cream of chicken soup, chiles, onions, and only 2 cups of cheese.
(4) Place half this mixture over the chips.
(5) Add another layer of chips on top of this.
(6) Top those chips with the rest of the mixture. Then spread the last cup of cheese over the top.
(7) Bake for 20 minutes or until cheese on top has melted.
When this Chicken Tortilla bake comes out of the oven, it is going to be bubbling hot! Let it sit and cool before serving.
Note: I just want to point out that you can make this with fresh chicken, beef, turkey, ham, or whatever meat you choose. You can also make it with leftover meats!
