Chicken Breasts with Couscous Recipe

Chicken breasts with couscous


This is very simple to make. It can be made in a flash with pre cooked chicken breasts, or smoked chicken breasts. The other ingredients in the couscous mix can be varied to suit the season, or adapted so that you use whatever is in your store cupboard!

This chicken breast recipe will serve 2-4 people, depending what you add to your couscous.

Chicken breast Ingredients


2 chicken breasts

2 tablespoons extra virgin olive oil

3 tablespoons lemon juice

Extra tablespoon olive oil for frying

Method


Marinate chicken for 30 minutes in the olive oil and lemon juice. Remove breasts and pat dry. Heat the extra tablespoon of olive oil in frying pan. Add chicken breasts. Shallow fry chicken breasts for 3 minutes on each side. They should feel springy to the touch. Otherwise cut one in half and check to see if chicken breasts are cooked through.

Remove chicken breasts from pan and cut into cubes.

Couscous Mix

Ingredients


1 cup instant couscous

1 teaspoon instant chicken stock

250 ml boiling water

Knob butter

Method


Boil water in kettle. Pour into large bowl. As one teaspoon chicken stock and stir. Add cup of instant couscous and stir. Wait 3 minutes until couscous swells. The couscous is now ready!!!

Add cubed chicken breasts to couscous.

Other ingredients


1. For a Mediterranean flavour chicken breast and couscous dish.


Just add to the couscous and chicken breast mixture:

One chopped spring onion

Two chopped tomatoes ( or a handful of red or red and yellow cherry tomatoes.)

Six shredded basil leaves.

Chopped red, yellow, orange or green sweet peppers.


2. For an oriental flavour chicken breast and couscous dish


Just add to the couscous and chicken breast mixture:

One chopped spring onion

Dash of soy sauce

Handful cashew nuts

Drained tin of baby corn

Handful of chopped snow or sugar snap peas

3. For a French style chicken breast and couscous dish


Just add to the couscous and chicken breast mixture:

One chopped spring onion

Handful of shredded French Tarragon

Handful of halved sweet green grapes.

Handful of shredded spinach

4 Or a store cupboard chicken breast and couscous dish
