Healthy After-School Snack Mix

Years ago when I was in school I always came home hungry. Sure I ate lunch at school, but by the time I walked out of class and into my home, my stomach was growling. There was no way I could wait until dinner time to eat. I had to eat a snack to hold me over.

Are your kids the same way? Do they come home from school and go rambling through the cabinets looking for something to munch on? Instead of having potato chips and such, here is a recipe for an easy, healthy snack mix.

You will need these ingredients to make the Snack Mix:

1 6 ounce package of dried cherries

1 6 ounce package of dried cranberries

3 cups of Goldfish crackers

1 cup of unsalted peanuts

How to prepare the Snack Mix:

(1) In a large bowl, mix together all the ingredients.

(2) Store in a sealable container.

This recipe makes enough snack mix that it may last an entire school week, depending on how many children you have. You can always add or substitute your kids' favorite snack crackers and dried fruit to the recipe. Try Baked Cheez-Its and dried apricots, apples, raisins, or peaches.

This snack would also go well with a fresh healthy smoothie. Also, your kids can pack this snack mix to eat for their lunch. It would go great with sandwiches!

This snack mix takes about 10 minutes to prepare, and your kids will be much better off eating this than junk food.
