Coming from a Irish family we are always eating potatoes, but since I eat potatoes so much I like to try and make different recipes to give the potatoes a new name and taste. You do have so many choices like mashed potatoes, french fries, fried potatoes, scalloped etc. So what do you do if you make some much potatoes and have all those leftovers of them? I know when I make mashed potatoes most of time I used the Idaho box ones and add my own spices to perk them up, but I always make enough for an army. To me they taste just as good as homemade ones if you put the right touches on them. Instead of throwing them out I create some delicious ideas that I hope you will enjoy.

The first recipe is leftover potato bacon puffs. Just take about seven cooked slices of bacon crumbled up into very small pieces. Now if you don't have cooked bacon you can improvise with baco bits. I would suggest about a half cup of them. Three eggs very well beaten, 1 1/3 cups of flour, 1 1/2 tablespoons of baking powder, teaspoon of salt, pinch of pepper, and your oil for the frying pan. Take your potatoes, bacon, and eggs and place them into a medium sized bowl. Now you have to add your flour, baking powder, salt, and your pepper to the bowl. Mix this up well. Put your bowl aside for now and take out a large frying pan placing enough oil in the bottom of the pan. I would say about a inch or two deep like you do with your chicken. Let it heat up for about ten minutes. When it's hot enough take a spoon and place your potato mixture on the spoon drop into the heated pan. Place as many as you can let them cook for about four minutes. When brown enough take them out and drain on a paper towel and enjoy.

This is awesome. A restaurant here in Columbia, Mo, makes this awesome dish that could really make use of leftovers from a steak and potatoes meal. It's a BLEU CHEESE STEAK WRAP. They cut the meat into very small bits, add tons of bleu cheese, mix it into mashed potatoes and wrap it in a tortilla. It's excellent!

Such unique ideas! My mom used to make something like the bacon potato puffs, minus the bacon. I always loved them, and your version sounds even better.
