One of the most common problems that the expert as well as the novice cooks face while baking pie is that the crust gets burnt. To avoid this most of them roll aluminium foil around the pie and put it in the oven. Since the foil cannot be made of uniform size the pie is unevenly cooked and the color change spoils the presentation. To remove the foil without harming the pie and pulling them out without getting the hands burnt is another challenge. I was one among this lot till a few days ago until my friend gifted me the Mrs. Anderson's Pie Crust Shield.

This is basically an aluminium metallic shield that safeguards the pie dough from flowing out. This is very simple to use and is totally mess free. Once the pie is set and is about o be introduced in the oven just insert the Crust Shield and this should be removed only after the pie is taken and cooled. The shield gives a perfect uniform circular shape to the pie and not only that the dough is forced to rise within the shield and it does not go out of the circumference. The pie comes out evenly cooked and the crust does not break or crack. The golden brown crunchy crust is what I like the most about pie and this shield facilitates the process.

Since the shield is made of aluminium it has a tendency to get heated up and conduct the heat across the pie. So what happens is that the external ring of the pie has a dark brown color when compared to the centre crust. However this is better than burning the pie. I am still searching for a pie shield that is made of silicone or heat resistant material that does not add additional heat to the pie. Make sure that this 10 inch Pie Crust Shield sits tightly on the plate without any gap below so that the dough does not flow out.

The Mrs. Anderson's Pie Crust Shield is a steal for $3 and this is long lasting. Since it is made of light weight material it is easy to lift them. Sometimes I find that some part of the crust adheres to the shield and to avoid this I grease the inner surface of the shield. This is a plain ring and does not contain nay crevices making it easy to clean. This is machine washable.
