Chocolate Creme Brulee W/ White Rasberry Chocolate Sauce
An Elegant Desert for Valentines Day

Oh Yes this desert is King of all King's. What better way to impress someone on Valentines Day. I cant tell you how good this is, You just need a little courage to make it and find out for yourself. Its the only way, but I guarantee you its top notch. When I make this for my wife I'm off the hook for about a month and I'm out of the shed completely. This desert is the ultimate band -aid for all life's little skirmishes. Get's you at out of trouble each and every time. Believe me I know !! If your a chocolate lover get ready. This desert is a chocolate lovers absolute dream, . If you can find a heart shaped ramekin ( porcelain dish ) ,and make this chocolate creme brulee on Valentine's Day, you are Golden my friend. This desert is not that difficult to make and it comes straight to you from the heart. I use a fresh vanilla bean,split in half lentgh wise. I scrape out the vanilla seeds which gives the desert a fantastic flavor .I also use fine quality milk chocolate in the brulee, and I use fine rich white chocolate in the sauce. I puree fresh raspberries and strain that into the melted white chocolate which in turn gives me that white raspberry chocolate sauce. Everything else associated with the assembly of the brulee is simple. Once the brulee is out of the oven, I sprinkle some granulated sugar on top, and then I caramelize the sugar by using a small torch, No torch ?, You can also do it by flash browning it under the broiler .I really hope you enjoy this recipe and even more I wish you the happiest Valentines Day you ever had. I know if you come out of the kitchen with this chocolate creme brulee in your hand , you have just captured the hearts that ache for this wonderful desert.. Its a Winner !!! Enjoy the recipe.
Ingredients (based on 6-8 )
You need to bake this in porcelain ramekins or baking dish (Ramekins are about 3 1/2 inches from side to side )
1) 6 egg yolks
2) 1 quart of heavy cream
3) 7 oz of fine quality milk chocolate
4) 1 Large vanilla bean split in half from top to bottom and seeds scraped out--you need the seeds
5) Granulated sugar for top of brulee--last step in process
7) 1/4 cup of sugar
Assembly
1) In a medium size bowl whisk together your egg yolk's and sugar
