Hawks is a restaurant located in Granite Bay; this is an upscale part of Sacramento that is home to a beautiful golf course and very expensive homes. Hawks restaurant is located in the new upscale Quarry Ponds shopping center, and was originally promised to be opening in spring of 2007; delays in the building process didn't allow the restaurant to finally open its doors until November 2007. Hawks is another variation of Sacramento's ever growing local movement; they have a keen reliance on local area farmers for seasonal organic produce. Before visiting this restaurant I found out that the owners are Michael Fagnoni and his wife Molly Hawks, they are a husband and wife duo who originally met each other while cooking at the acclaimed Village Pub restaurant.

Hawks restaurant serves a range of high-end foods including, Idaho Trout, Roquefort, and dayboat scallops. There is also a selection of wines including German Riesling, this wine was served to me while I was waiting for my mean, the wine was kept is a beautiful bottle and the hostess was very polite. I also tried the wild-mushroom soup, this had an earthy flavor but nevertheless it was delicious. For the extra course I ordered a charcuterie which included the duck-liver mousse, duck rillettes and country pork pâté.

The extra course was definitely the perfect serving size for two; I and my wife were in complete ecstasy over the presentation. The charcuterie was presented on a beautiful oval plate, complete with a purslane salad, and four cornichons. I also ordered a small amount of mustard sauce along with the meal, the slices of rillete were delicious, they are duck but I happened to think that they tasted like chicken. After I finished the first course we received a delicious endive salad, with Sierra Beauty apples, pecans and I ordered some extra maple brown butter. The salad was really fresh and the maple brown butter was so warm it would make your taste buds melt. The sierra beauty apples were fresh, and they really tasted crisp and clean.
