I've been cooking for about 43 year now, since I was 12. Ok, do the math, I'm old, however young to an eighty year old! My grandfather was an Italian chef in the early 1920s-50s cooking at fine hotels in Chicago. So let's just say, I have good credentials when it comes to knowing how to make a good Italian sauce. For the past three or four batches, I have noticed something not working. The sauce lost its pizzazz. I have a sensitive palate and despite my family saying it was fine, it was not up to my standards because "fine" wasn't good enough for this Italian mama. This has really been bugging me because I'm accustomed to making a great sauce for my family. Through our Italian generations we had thick sauces. I always used mainly tomato paste from the can, like grandpa, for the base with adding water to dilute it. However, there has been an increasing tin flavor I have noticed when I have been using them lately. Maybe the cans of paste came from China? All I know is something is different in the taste for the past several months.

I even tried different brands. So, I wanted to get away from tin cans and looked for cartons of paste. Well, I know they have tubes of paste which is in small quantities but not in cartons. However,last week I came across Pacific Natural Food brands of organic crushed tomatoes, tomato sauce, and diced tomatoes. They were all in 13.6 ounce cartons. I bought a combination of them and I just finished making the sauce today. So here is the review for Pacific Natural Food tomato products:

Mama Mia,that'sa Italian! Whew! I finally got my mojo back with Pacific Natural Foods. You can definitely taste the difference from tomatoes in a carton versus a tin can. It's so clean and fresh tasting. However, best of all it is organic. Now, I will confess, I still would prefer a paste for that thicker sauce but it still was double because I reduced the moisture down by cooking it longer and I added a lot of Parmesean Reggiano Cheese...lots! Hey, I'm Italian, what can I say.

Souns yummy! I always cook sauce from scratch using my mother's recipe. Sacramento tomato juice, Contadina paste and then lots of seasonings...it needs to cook all day on the stove, so it is definitely a weekend project.

Thank you for the great review. Certified organic food is becoming the choice of healthy eating for many. Our friend in Austin chairs the local organic farmers organization and is really successful with his organic food farm. Good article.

actually this is the old fashion way..italians though actually use tomato paste. for the long cooking sauce...my grandfather used paste mainly..but add maybe a can of tomato sauce..(i'm not talking about seasonings like a Prego or Ragu..that would be sacrileges in my family..LOL! .when you use fresh ingredients you don't want to cook long otherwise you defeat that purpose of that fresh tomato taste..it's just a matter of how you want it to taste..i use to put the meat in too..3 kinds of meat..but now, i'm vegetarian so i adapted..what gets me concern is..i have a feeling this is coming from China based on the link i provided in the article..the taste has change from those cans that i have used for decades..something is wrong..that's all i know..

Yum! Great review! I will have to try those. I've been doing it the old-fashioned way with all fresh ingredients because I can't stand the tin can taste either. LOL But, the old-fashioned way takes so long sometimes. I'm getting these for those days I don't want to be in the kitchen forever. :-)

Thanks all!...and Lyn...tell hubby he's on!...my stuff is always from scratch too..i prefer the paste because it has less acid and gives the thick sauce..but for now this will do...i was thinking of combining some of the paste in a tube with it....but hey, that is super he is doing it for you and he takes time out to cook that down...he has to have some Italian in him..lol!

That sounds like a winner there! My hub and you should have a best sauce contest!! We all love his that he's famous for here @ home... I always make him do a pan of lasagne that I can come home to after having a new baby! Its such a great tradition cuz he does it from scratch and if it's a summer baby he presses his own tomatoes and cooks down the sauce for dayz....UUGGHH... I'm not that ambitious with cooking! Great article... it gave me good feelings of the cooking that goes on here! Great work! :)
