First, I am not a vegetarian. I am a meat reductionist. I love the taste and savoriness of meat. I occassionally induldge in a fastfood burger. But I am also a conservationist, and despite their constant vilanization in children's literature, I have a deep empathy towards wolves because of reincarnation or for whatever reason.
I even have a theory that some gutter punks and hippies are reincarnated animals who were killed by humans leeching off the natural world. Now they have come back to leech off of humans and wait for a revolution or riot for a chance to really do some damage. The gutter punks would usually be the souls of wild animals and the hippies are often the souls of domesticated animals but not always.
So - now that the wolves have lost their federal protection under the Endagered Species Act and the United Nations released the report on how the production of meat when all factors are considered; feeding livestock, butchering and processing in climate controlled plants, then freezing, shipping frozen, storing, cooking; the production of meat produces more greenhouse gases that contribute to global climate change than the entire transportation sector, I eat less meat.
(That's something the USA can hold against the Europeans, from what I've seen there are a lot more vegetarians in America.)
Since I still eat meat and I was raised on Mexican food - arguably one of the tastiest cultural cuisines on the planet if you are talking about authentic Mexican -flavor is rather important to me.
When I attend vegan potlucks, I do not savor the unsavory flavor of unseasoned bean sprouts and carrots rolled up with moist rice wraps, which I politely lie about enjoying. The carrots are the only tasty part of that culinary equation, and they are good for your eyes.
Now that that is out of the way, shall we begin?

The lettuce was looking a little wilted at the store, so we used sweet red pepper to add some crunch and color to these tacos sin carne.
