Here's what you'll need:
-1 box of cake mix or a recipe that will yield 2 round cake layers. I like to use either White Vanilla cake or Funfetti because of the cute colors
-Food Coloring (red, green, and blue)
-White icing (either from a recipe you like or store bought)
-Coconut shavings (a standard bag will do)
-Jellybeans
-Twizzlers pull-n-peel Red
-A cookie sheet or piece of cardboard
Here's what you'll need to do:
Bake the cake and let the pans cool. When they're cool enough, remove the cake from the pans and put them onto your work surface. You'll cut one of the circles into three pieces: the center into the shape of a bow tie and the two remaining sides as identically sized/shaped ears. (see picture) You will only need to make 2 cuts with the knife to make the shape you're going for. It's ok if it's not perfect, but do you
Dye 1/4 to 1/3 of the coconut shavings green so they look like grass. You can just put the coconut into ziploc bag, add a few drops of coloring, and shake to mix the color. Spread the "grass" onto the cookie sheet or piece of cardboard. This will be what your Bunny Cake rests on.
Next, arrange the pieces of cake so the ears are at the top, then the circular cake (the head) with the bow tie piece underneath. Ice all of the pieces with vanilla icing.
Sprinkle white coconut shavings over the Bunny's head so it looks like fur. Dye some of the shavings pink and sprinkle them in the center of the "ear" pieces and use white for the edges of the ears. Dye the remaining coconut baby blue like you died the other shavings, and use this to cover the bow tie. If you prefer, you can make the bow tie pink or green or yellow.
Finally, decorate the bunny with candies to form the eyes (2 blue jellybeans look great), twizzler pieces for the whiskers and to outline the bunny's mouth, a pink jellybean for the bunny's nose, and various colored jelly beans to give the Bunny's tie a polka-dotted appearance.
Enjoy!
