Baked Beans a La Eric

A Different and Delicious Recipe for Baked Beans

This is a really delicious recipe for baked beans that utilizes several different types of canned beans. The recipe makes a lot and is a great dish to bring to a covered dish affair.

BEANS, BEANS, BEANS
Makes a lot
Saute' one finely chopped onion and add two cloves of garlic, minced. Then add one pound of hot Italian sausage and cook until no longer pink. Drain. Then stir in:

1 can tomato soup
1 cup BBQ sauce
½ cup brown sugar, packed
1 can kidney beans, drained
1 can butter beans or limas, drained
1 can green beans, drained
2 cans chili beans, undrained
1 can baked beans, undrained

Pour this into a baking dish. Spread 1 8 ounce can of tomato paste on top but do not mix in. Layer 6 or 7 strips of bacon over the tomato paste, but do not mix in.

Bake for 2 hours at 325 to 350. Now stir the bacon and bacon fat into the beans. Serve. It sounds weird but this is a delicious bean dish.

Bridget, leave the green beans out and add a can of limas or something you do like. Or double up on the chili beans or the baked beans, if you really want to try the recipe.

Adding this to the shopping list for the shopping I was supposed to do yesterday but...I tried to clean the coils of our fridge instead and got obsessive about it. ;)
