Many people in our society have been trying to make the switch over to healthy and natural eating habits. But with our hectic schedules, stressed out lifestyles, and the availability of inexpensive, highly processed, yet tasty foods, making the switch is not so easy.

Amy's is a company that saw the need for easily prepared wholesome foods, and filled it. While almost $4 for a frozen meal may not sound inexpensive, consider that the average "value meal" at fast food services often runs $5-6 and can contain more than 3 times the 330 calories found in Amy's Black Bean Enchilada Dinner, and contains very few nutrients if any.

Compare that to the 20% daily value of Vitamin A, 30% daily value of Vitamin C, 6% daily value of Calcium, and 15% daily value of Iron . And Amy's is almost totally organic, and uses no chemical preservatives or additives.

But how does it taste? Very good, actually. The Black Bean Enchilada Dinner With Spanish Rice & Beans is vegan, but you don't need to be vegan or even vegetarian to appreciate the full flavors of the meal. The enchilada itself had a firm shell that was not dry or crusty. The sauce that covered it did not extend much beyond just coating the enchilada, but the richness of flavor was very good, and I can only wish that there had been more of it. The Mexican rice with corn had just a little sweetness to balance the spices, and had just enough sauce to give it flavor and a nice texture. It was not dry or overly wet as many microwaved rice sides can be. I originally thought that the pinto bean side was a fat free refried beans dish. As such I found it rather dry, but flavorful. Once I read the label thoroughly, however, I realized that they weren't dry refried beans, but simply pinto beans that had been cooked soft enough to mush easily. I quickly reformed my opinion of their texture and decided that it was quite good as I don't normally like whole beans.
