Favorite Mother's Day Brunch Recipes

Brunch has always been an interesting quandary for me. It's not as heavy as breakfast, not as light as lunch but stuck somewhere in the middle. While it has to be special, planning a great Mother's Day brunch does not need to be difficult.

We traditionally do Mother's Day brunch in bed just prior to nap time. It's probably the only day of the year that I get to lay down for a nap before my 3-year-old. These recipes are simple enough that most teenagers and husbands can handle them without any motherly intervention but still different enough to be special, and difficult enough that your cooks will be proud. As I am the foodie in our house, I normally cook Mother's day brunch myself, while my little guy works as my assistant or colors a card for me.

I started cooking when I was about 9 years old (really!) with simple things. The first recipe dates back to those days. I actually found it's inspiration in a magazine, and have reworked it over the years to what I consider to be almost perfect 18 years later. I cook this every time I my mom, since it is one of her favorites, and always try to overnight her one on Mother's Day. You can make the recipe even more special by taking your mom to the farmers market on Saturday to pick up your fresh ingredients!

Blueberry Lemon Crumb Cake
(Prep Time: 20 min - Cook Time: 45 min)
Ingredients - Cake
· 2 cups all-purpose flour
· 2 teaspoons baking powder
· 1/2 teaspoon salt
· 1/4 cup vegetable oil
· 3/4 cup white sugar
· 1 egg
· 1/2 cup milk
· 1 cup fresh blueberries (1 small package)
· Zest of 1 medium to large lemon, very fine and chopped if necessary
· Juice of ½ lemon
Ingredients - Streusel
· 1/3 cup all-purpose flour
· 1/2 cup white sugar
· 1/2 teaspoon ground cinnamon
· 1/4 cup butter, softened

Directions
1. Preheat oven to 375 degrees F (190 degrees C). Grease (butter works best) and flour a 9 inch pan. Sift together the flour, baking powder and salt. Set aside.
