3 Easy Mother's Day Brunch Recipes

We all appreciate our mothers and should show her that every chance we get. Mother's Day though is extra special and a wonderful brunch for her is a great way to celebrate. Here are a few easy recipes to help you make the meal perfect.
 They are even easy enough for kids to make with some help and supervision.

*Hint* It's springtime, decorate the room with lots of beautiful fresh flowers. Try placing a few rosebuds or carnations among slices of fruit on a platter.

#1 Fresh Fruit Tart

Ingredients
2 bananas, pealed and sliced
2 apples or pears, cored and sliced
2 cups berries of your choice (strawberries and raspberries work especially well)
1 frozen pie crust
1 cup orange juice
1/2 cup sugar
1/2 teaspoon cinnamon

Orange drizzle sauce
1: Combine orange juice, sugar, cinnamon, and cornstarch in a small saucepan. Boil over low heat for 5 minutes, stirring frequently. Allow to cool.

Assembling the tart
1: Bake frozen pie crust according to package directions. Allow to cool.
2: Fill pie crust with fruit and drizzle orange sauce over the tart.
3: Serve chilled.

#2 Roasted Garlic Bagels

Ingredients
4 cloves garlic
1 tablespoon extra virgin olive oil
6 bagels
Shredded Parmesan cheese
Pinch oregano and basil to taste

1: Preheat Oven to 375 degrees F.
2: Peal the garlic clovesand either dice finely or chop in a food processor.
3: In a small bowl mix garlic, olive oil, oregano, and basil.
4: Slice the bagels and place on baking sheet.
5: Spread garlic mixture on the bagels. Sprinkle shredded parmesan on top.
6: Bake 15-20 minutes or until golden.
7: Serve warm and toasty.

#3 Citrus Smoothie

Ingredients
1 cup ice (about 8 cubes)
1 1/2 cups orange juice
1/4 cup lemon juice
1/4 cup lime juice
1 peeled and sliced seedless orange
1/2 cup strawberries (other sliced fruits such as mango or peach can also be used)

Combine ingredients in a blender, cover, and puree. You can substitute other citrus juice such as grapfruit for the lemon and lime.
