Incredible Eggs - Nutritious Powerhouse

Around twenty years ago, a regular staple of breakfasts everywhere was criticized for having too much cholesterol - eggs. This was in the era when the watchword "cholesterol" alone swayed peoples' opinions, and eggs began to fall off the popularity wagon they'd been on... for thousands of years! Finally, eggs have been somewhat vindicated. Recent studies suggest that a diet containing one to two eggs a day is no more artery-clogging than one that contains an egg or week - or none at all! A study conducted at the Harvard School of Public Health compared a population of nurses - half ate less than one egg a week, half ate more than one egg a day. There was no difference in cholesterol between the two groups. It is now known that saturated fats in the diet lead to high cholesterol - not cholesterol found in foods.
Eggs actually satisfy the appetite much quicker than calorie heavy breakfast bagels, or other various breakfast foods. They are contained in the Food Guide Pyramid's protein rich food group, and the protein found in eggs is easily assimilated into the body. They also have an amazing amount of nutrients, protein and contain only about seventy calories each! Eggs are vitamin and mineral rich - A, B (B12 especially) and D, riboflavin, choline and selenium are only a few of the nutrients the body needs that are found in eggs.
The American Heart Association has said that one egg a day is perfectly acceptable - if you do have high cholesterol, and are still worried, choosing a "small" egg over the "large" eggs should eliminate any problems. Also, egg whites contain no cholesterol!
Eggs are easy to prepare in a number of ways, and I've seen kitchen klutzes able to make the most delicious egg dishes without much trouble. That's something not a lot of foods can testify to! They're also cheap, have long shelf lives and delicious! So, really - what's not to like?
