Easy Chocolate Mother's Day Cookies

I love to bake for Mother's Day. As with most people I am very busy and on a limited budget, so my favorite recipes are quick, easy & taste good. To make my current favorite you need one box of cake mix, ½ cup chocolate chips, 2 eggs and 1/3 cup vegetable oil. I prefer devil's food cake mix and semi-sweet chips. You can also make this recipe with no chips at all. Fun-fetti cake mix makes excellent cookies too.

Stir together the cake mix, eggs and vegetable oil then add the chips. Take a teaspoon and make small dough balls and place them on an ungreased cookie sheet. I always end up with exactly 48 cookies from this recipe, but you could get more or less out of it depending on exactly how large you make the cookies. The oven needs to be set at 350 degrees. Bake the cookies for 8 minutes.

If you'd like to jazz these cookies up a little bit you can add a small dollop of frosting to these. I prefer to mix some chocolate frosting with a little cream cheese to add to the top.

Not only is this easy for kids to make moms for Mother's Day but it's a quick and easy recipe to whip up when company unexpectedly drops by.
