How to Make Healthy Fried Chicken
Low Carbohydrate, Lower in Fat, Tastes Great

I love fried chicken hot, cold, with friends or alone. The doctors tell me there s too much fat in fried chicken. Would someone tell me what too much is? OK I've read that "Too much of a good thing is wonderful!" in fact the Queen Goddess has a plaque in the kitchen with that exact quote. We debate whether Liberace said it or if he was quoting Mae West. OK here is a fried chicken recipe that is not so high in fat, low in carbohydrates, and tastes great. Wash Your hands and roll up your sleeves the cooking is about to begin.Healthy Fried Chicken
Ingredients:
6-8 chicken thighs (skin on or off you choose)
3 cups Parmesan cheese (The green box stuff)
1 Tablespoon Sea Salt (Kosher is OK)
1 Tablespoon Garlic Powder (more if you dare)
1 Tablespoon Paprika (Use your favorite)
1 Tablespoon Chili Powder (more if you dare)
1 teaspoon black pepper (Fresh ground is always best)
1 Cup French Onion chip dip (Your favorite brand)
2 Tablespoon Grainy Brown Mustard (Poupon if you have to)
1-2 Tablespoon milk (use what you drink)
vegetable spray (I like the Pam olive oil flavor)
Directions:
Place Parmesan cheese, salt, garlic powder, paprika, chili powder, black pepper into zippy bag shake well and set aside. In a shallow dish whip chip dip, mustard, and milk to a consistency of mayonnaise. Wash chicken in cold water and pat dry. Pull off any excess fat. Roll chicken in wet mixture and place in bag of dry mix, shake till coated. Do one or two pieces at a time. Spray pan with vegetable spray. Place on Jelly roll pan or other pan with a lip on it. Gently spray all pieces with vegetable spray. Bake in preheated 400 oven for 40-50 minuets.
Notes:
Turkey thighs work too but need to be cooked a bit longer, perhaps 60-80 minuets use you thermometer.
Make it all even if there is only you, your honey and the dog. The cold chicken makes wonderful lunches or a chicken salad.
