My July 4th Cake

We have a July 4th party every year we aren't traveling. Our guests all bring something to eat or drink but we take part in the food preparation as well. One of the favorite and most festive desserts I made has no name so I'll name it the 4th of July cake. I'm not much of a cook and don't bake so needless to say this is very easy. It's a dessert you can make with your kids and be creative with as well.

You'll start with a sponge cake. These are vanilla cakes that are very high. They are inexpensive so although the fruit you'll be using can add up financially at least the base of the cake won't break the bank. You'll find these sponge cakes in any supermarket. On top of it put a heavy layer of whipped cream or if you prefer Cool Whip. Now comes the fun part: decorate it with strawberries and blueberries. The first time I made it I was very traditional. The strawberries circled the top of the cake and the blueberries were piled up in the center. As the years went on and the same people were seeing it I started making designs with the blueberries like smiley faces or a flag. I also buy flag toothpicks that I use for my fresh fruit salad. I have in the past put several of these around the cake to make it even more festive.

If it happens to be someone's birthday or anniversary this can double as a cake to celebrate that occasion as well. You'll want to keep it in the refrigerator right up until the time your guests come because of the whipped cream. This 4th of July cake has always been a hit. It's delicious, festive and if you have a warm night it's a nice cool dessert.

I just figured out maybe the sponge cake IS angle food cake - so it really is close to what I do. Too funny

Sounds good - we do a somewhat similar one with angle food cake scooped out in the middle and filled with the whip cream & fruit then back together and whip cram and fruit again on the outside, like you did. We are set to have wonderful weather here so hopefully we enjoy the sailboat :-)
