4th of July Recipes: Honey Glazed Chicken and Potato Salad

Its that time of year again, time to fire up the grills and cool of with sweet treats. Everyone has been to the cliché 4th of July BBQ, with hamburgers and hotdogs. However, it is 2008 and it's time to kick it up a notch! Here are some fun and delicious recipes that you can serve at your next 4th of July gathering.

Warm Potato Salad
( Ideal in for outdoor events, no mayo no spoil)

small red potatoes 1 bag
Olive oil 1/2 cup
Bacon 10 strips
Cheddar Cheese 1/2 a cup
Green Onions 2 stalks
Garlic 2 cloves finely chopped
Salt
Pepper

Boil the potatoes, cook the bacon to its crisp, Sautee the garlic in the olive oil. Then cut the potatoes into two or three chunks, crumble the bacon over it, pour the garlic and olive oil over it, salt and pepper to taste. Then slice the green onions on a diagonal and place in the potatoes. Finally sprinkle with some cheese, then lightly toss and serve.

Honey Glazed Chicken

(not your typical BBQ chicken)

Chicken use your favorite parts, leg, thigh, wing, etc...
Honey 1 1/2 cup
Brown Sugar
Pineapple Juice 1/2 cup
Salt
Pepper

In a bowl mix the honey, garlic, and the pineapple juice together. Salt and pepper the chicken, then place the glaze all over the chicken. Place the chicken in a baking dish in a 350-degree oven or place on the grill. Sprinkle some of the brown sugar on top of the chicken. Cook thoroughly and serve.

Tropical Cooler
( A cool refreshing drink that everyone will love)
Ginger Ale 1 1/2 cups
Lemon Italian Ice 3 cups
Tropical Punch 2 cups

Pour punch in the pitcher, then mix in the Italian ice to a consistency where it is still thick. Then pour in the ginger ale lightly stir and serve.
