Barbecue Beef and Potato Salad

This barbecue beef recipe and potato salad recipe makes a wonderful addition to your Fourth of July recipes.

This can be prepared the day before and placed on your outdoor grill to warm up and it will make a wonderful barbecue beef sandwich to complement your Fourth of July recipes. Barb-B-Q Roast

3 lb roast

2 onions chopped

Clove of garlic

½ to 1 cup barbecue sauce

Salt and pepper to taste

2 tbsp vinegar

2 tbsp Worcestershire sauce

8 oz catsup

1 ½ cup water

Throw all in a pan and seal with foil

Bake at 300 degrees for 5 hours

Flake in small pieces with fork and serve on bun

Potato salad

2-3 pounds potatoes, cooked until tender

Allow potatoes to cool before chopping and mashing

1/4 to 1/2 cup chopped onion (preferably red onion)

1 tablespoon parsley

1/4 to 1/2 cup chopped celery

Thinly sliced tomatoes and cucumber, for garnish

5 or 6 hard boiled eggs, cooled then broken into pieces

3/4 cup mayonnaise (Hellman's is preferred (a little more or less, as desired)

1 to 2 tablespoons prepared mustard

Salt and pepper to taste

PREPARATION:

Combine potatoes, egg, onions, parsley, and celery. Stir in mayonnaise, mustard, and salt and pepper to taste. Stir the mayonnaise and mustard and add to your taste
Top with thinly sliced tomatoes and cucumber, if desired
