Summer Dream Lemon Whip Pie

One of My Favorite Sugar Free Recipes

It's summer time and with the heat comes the need for refreshing treats. In my opinion nothing is more refreshing then the tart and tangy taste of lemon. Here's one of my favorite sugar free recipes for Lemon Whip Pie.

Summer Dream Lemon Whip Pie

1 package (regular size) lemon flavor sugar free gelatin.

1.5 tsp grated lemon peel

2/3 cups boiling water

½ cup cold water

Some ice cubes

2 Tbsp lemon juice

2 cups Cool Whip sugar free topping (thawed)

1 reduced fat graham cracker pie shell

Pour boiling water into dry gelatin and stir about 2 minutes until it is completely dissolved. Add ice to cold water to measure 1 cup and add this to gelatin and stir until all ice is melted. Stir in lemon juice and lemon peel. Then add in Cool Whip and stir with metal whisk until blended well. Refrigerate about 20 minutes until very thick. Then spoon into pie shell and refrigerate again for at least 4 hours or overnight. You can make a lime version of this pie simply by using lime juice, peel and gelatin in place of the lemon. Try it and you will understand why it is one of my favorite sugar free recipes.

You can spruce up the presentation of this pie by placing thinly sliced lemon around edge of pie or fanned out in the center of the pie. This pie tastes so good no one will ever guess it is sugar free. Serve it to your guests and family first and let them taste it before you tell them it is sugar free. They will be very surprised!
