A Delicious Fat Free Recipe - Peaches Straight-From-the-Tree Cobbler

Anyone who loves peaches will love this recipe. I experimented with a traditional cobbler recipe when my husband was on a fat free diet and the combined ingredients I added in this one made for a very tasty cobbler. It is an excellent, fat free dessert recipe that is sure to please both family and guests. It is well worth the effort to peel and slice the just-picked-from-the-tree peaches needed for the scrumptious dessert.

Start with 6 cups of fresh peaches, peeled and sliced (about 6 medium) in a large saucepan, about 3 ½ quart in size. Add to the peaches ¾ cup of packed dark brown sugar, 1 tablespoon of cornstarch, 1 tablespoon of lemon juice, and 1 teaspoon of cinnamon. Constantly stir over heat until mixture boils for one full minute. Remove from the stove and pour into a one and one-half quart, glass baking dish, which has been sprayed with non-fat cooking spray.

Next mix together 1 ½ cups of all purpose flour, ¾ cup of granulated sugar, 2 teaspoons of baking powder, and ¼ teaspoon of salt. Add 1/3 cup of skim milk to this mixture and stir until moistened and the mixture resembles small crumbs.

Combine together 1/3 cup of skim milk, 1 egg substitute (beaten) and ¼ cup of water. Mix together with wire whisk. Then add this mixture to the dry ingredients and mix until well moistened.

Drop by ¼ cupfuls over the hot filling in the baking dish and bake for 30 to 35 minutes in a preheated oven at 350 degrees Fahrenheit.

A variation for this fat free recipe is to use a different type of fruit such as apples, blueberries, or cherries.

After removing from the oven, top with fat free Cool Whip or fat free yogurt for a heavenly taste.

This fat free recipe makes 6-8 servings and there are approximately 205 calories and .15 grams of fat in each serving.
