5 Great Casserole Recipes for Potlucks

Potluck meals are a great time for fun fellowship, enjoying different dishes, and perhaps swapping and learning new recipes. If you've got a potluck approaching, and aren't sure what to bring, consider one of these hearty casseroles.

Potluck Recipe #1: Hashbrown Potato Casserole

This is my favorite casserole to bring to a potluck. My church has potlucks frequently and this is usually what I take. It's fattening, but it's yummy and there's never any leftovers. It's also very easy, perfect for novice
 cooks!

1 bag (2 lb) of frozen hash brown potatoes (You can use either the cubes or string cuts)
1 Can of Cream of Chicken Soup
1 1/2 Cups of Shredded Cheddar Cheese (Sometimes I use more)
1/2 cup of melted butter
1 8 oz. container of sour cream
Dash of Salt/Pepper
1/2 of onion, chopped (I used frozen onions usually)
2 cups of Cornflake Cereal - (Optional - I usually don't add them.)

1. Thaw potatoes, either overnight in the refrigerator or in the microwave. 2. Preheat oven to 325. 3. In a mixing bowl, combine the potatoes and all ingredients except the cornflakes and 1/2 cup of cheese. 4. Spread the mixture in a large casserole dish. 5. Sprinkle the remaining cheese and cornflakes (if desired) on top. 6. Cover with foil. 6. Bake for 1 hour to 1 hour and 15 minutes.

Potluck Recipe #2: Pizza Casserole

Fix this dish and you won't have to worry about leftovers. It's very popular among children.

16 oz of rotini pasta (fully cooked)
2 lbs of ground beef
2 cans/jars of spaghetti sauce
1 onion, chopped (or 1 cup of frozen onions)
1 1/2 teaspoons of Italian Seasoning
2 Tablespoons Olive Oil
4-5 cups of mozzarella cheese
1 8 oz package of pepperoni

1. Preheat oven to 350 degrees. Brown the ground beef with the onion and Italian seasoning in oil. Drain. 2. Add the spaghetti sauce, cooked pasta and 2-3 cups of mozzarella cheese. 3. Shred (using your washed hands) a few slices of pepperoni to add to the mixture. 4. Pour the mixture in a casserole dish. 5. Cover with the remaining cheese. 6. Add the pepperoni on top. 7. Cover with foil. 8. Bake for 30 minutes.
