Sugar Free Chocolate Chip Macadamia Coconut Cookies

Here is a tasty sugar free cookie recipe. If you are watching fat intake, these are not for you. The chocolate, macadamia nuts, and almonds do contain fat, but they are full of protein, fiber, and antioxidants. They also won't raise blood sugar levels, and are a tasty treat.These sugar free cookies are flavorful and a nice accompaniment with tea or coffee. They can also be broken into pieces and served over sugar free ice cream, or on top of fruit salads.
Sugar Free Chocolate Chip Macadamia Coconut Cookies
1 sugar free chocolate bar, chopped
1TBS chopped macadamia nuts
2 TBS. ground almonds
1/4 c. ground, unsweetened coconut
Pinch salt
2 TBS. Splenda sugar free sweetener
1/4 tsp. coconut or pineapple extract (The pineapple gives the cookie a tropical, pina colada flavor. Add more extract for a stronger flavor.)
1 egg
Mix all ingredients until moistened.
Roll into balls using 1 teaspoon of dough for each ball.
Place the balls onto a lined cookie sheet. Parchment paper works great for this. It is non-stick and makes an easy clean up.
Cover the balls with parchment paper and flatten each one, using a spatula.
Bake at 325 degrees for 15 to 20 minutes. They should be brown and crisp. Watch closely because they burn easily.
These cookies are sugar free, but not low fat. They are perfect for diabetic or lo-carb diets. There is only one carb per cookie.
