Gluten Free Recipes: Graham Crackers
We have close family friends who are gluten intolerant, so I have dabbled a bit with gluten free baking. I do not have any gluten free cookbooks since no one in my family has Celiac disease or is gluten intolerant, so I have been learning to convert regular wheat flour recipes into gluten free recipes. My chocolate cake was decent. My chocolate chip cookies were a flop. I altered a graham cracker recipe and they turned out wonderfully! Even our friends were impressed! One close friend has given me tips over the past year and I have to say the most important tip is the tip she gave me to add Xanthan Gum to wheat-free and gluten-free recipes. I did not add the Xanthan Gum to my cookies or cake and I think this was the difference between mediocre and fabulous! These graham crackers were a big hit!
We served these graham crackers at our recent barbeque. It was nice to have gluten free graham crackers for our gluten free friends when we made S'mores for dessert. The gluten intolerant children raved over them and even my own children thought they tasted good. In fact, I had to tell my children to stop eating the gluten free graham crackers and to stick with the regular graham crackers! We had no leftovers when the guests left our house.
Surprisingly, these are not very time consuming to make. I had them out of the oven within one hour of starting the process of making the dough. I used Bob's Red Mill All Purpose Gluten Free Baking Flour and Bob's Red Mill All Purpose Gluten Free Baking Flour.
Gluten Free Graham Crackers
2 cups Bob's Red Mill All Purpose Gluten Free Baking Flour
2 teaspoons Bob's Red Mill Xanthan Gum
¾ cup confectioners' sugar
1 teaspoon baking powder
½ teaspoon salt
½ cup unsalted butter
2 tablespoons honey
2 tablespoons cold milk
