Sugar Free Bran, Almond and Oatmeal Bars

1 1/2 c Rolled oats
1/3 c fruit juice concentrate (your choice) or you can use 1/3 c. honey
1/4 c almonds (chopped fine)
1/4 tsp almond extract
1/2 tsp cinnamon (add more if you like cinnamon)
1/2 tsp vanilla extract
1/4 c oat bran (or you can use Total or another Bran cereal)
3 Tbsp vegetable oil

Spray a baking sheet with Pam. Preheat oven to 350 degrees.
Mix all dry ingredients. Add remaining ingredients to dry mixture. Mix until moistened.

Press mixture into a rectangular shape 7 x 9 inch pan.
Bake 12 minutes. When bars are done cut into bars Separate the bars slightly and return to oven for 3 to 5 minutes more. The browner the bottom of your bars are, the crisper they will get as they cool.
Place on a wire rack to cool.

Filling
1 sm apple finely chopped (leave the skin on)
1/4 c chopped walnuts
1/2 tsp vanilla extract
1 tsp granulated sugar
1 tsp. cinnamon
2 Tbsp Butter or margarine melted

Batter

1 1/2 c milk
1/2 c packed brown sugar
1 1/2 c 100% bran cereal
2 c flour
1/3 c vegetable oil
1 Tbsp baking powder
1 tsp Allspice
1 egg
1/2 tsp Salt

Grease large muffin tins. For filling and mix ingredients; set aside.
Combine milk and cereal let stand about5 minutes. Stir in the egg, oil and brown sugar Mix remaining ingredients then add cereal mixture i stirring until moist.

Fill muffin tins to 1/2 Top with 1 Tbsp apple filling pressing gently into batter. Spoon the rest of the batter over the top of the apple mixture.
Bake 20 minutes at 400 degrees until firm to the touch. Let cool in muffin tins for 5-10 minutes. Then cool on rack.

Store in airtight container.

Sugar Free Creme De Mint Chocolate Balls

2 c milk chocolate (real) chips
2 1/2 Tbsp flavored liqueur (mint)
1/4 c sour cream

Melt the milk chocolate chips in microwave, stir until smooth. Mix in sour cream. Add mint flavor. Chill until thickened, about 30 minutes. Roll into one inch balls and place on a cookie sheet covered with aluminum foil. Chill until ready to serve.

Sugar Free Lemon Cheesecake Pie

Crust

1 2/3 c graham cracker crumbs, finely crushed
1/3 c butter or margarine, softened
1/4 c sugar(sugar free)
