There are a lot of different chocolate products that you can buy to make candy with; bark is one of my favorites because it sets up quickly and doesn't have a waxy taste to it even though it does have a bit more paraffin in it. I started using the Premium Melts from Wilton about a year ago and had good luck with them; you do need to be extremely careful when melting them or the chocolate could scorch or burn. You can get the Premium Melts in three flavors but one thing that is consistent about all of them is the creamy rich taste.

Light Cocoa 1911-412
White 1911-410
Dark Cocoa 1911-411

Please note, if you are ordering these online make sure you use the product number to ensure that you get this specific product and not one of the colored Candy Melt bags. It has happened to me in the past and it cost me time and money to reorder the correct ones.

The twelve ounce bags have an average selling price of $3.69 and can be stored for about a year. You will need to keep them in a cool but not cold place until you are ready o use them but if they do melt it isn't as issue because you can melt them over and over. These are different from the regular Candy Melts from Wilton; they do have a richer taste but you are paying more for it. The regular Candy Melts sell for about $2.59 and have fourteen ounces of product to them so you are playing less but getting more for them.

When I make candy I use plastic molds and I have never had any problems with the Premium Melts and the molds that I own. You can use these for dipping strawberries, pretzels and other treats but it can get expensive if you have more than a few to dip. This is the only product I will use when I am serving a chocolate fondue for dessert; the chocolate doesn't develop a bad taste after being liquefied and it sticks well to anything that is dipped in it.

Thanks for the comment everyone. Most of the Wilton chocolate that I have bought has agreed with me meaning no repercussions from being lactose intolerant.

Thanks for putting in there about you being able to tolerate them with your lactose intolerance. Many of us are intolerant of milk products and it is good to know that we can sneak this brand of chocolate by without repercussions!
