Easy Red Potato Salad Recipe
It's the perfect time of year to set up a barbecue or picnic. What better side dish is there then potato salad? Summer is a great time to bust out the easy red potato salad recipe for everyone to enjoy.
Easy Red Potato Salad Recipe Ingredients
1 1/2 lbs of red potatoes
1/2 cup diced celery
1/2 cup diced green onion
1 1/4 cup mayonnaise
1/2 cup shredded cheddar cheese
1 diced hard boiled egg
1 teaspoon of mustard
1 teaspoon of salt
1 teaspoon of sugar
1 teaspoon of black pepper
Optional Ingredients:
Any spice or flavor you may wish to add.

Instructions
First you must place the potatoes in a sauce pan (or whatever else) and set them to boil. They should cook for 15 to 20 minutes and it may help to cut them into half or chunks. Remember too also boil the egg at this time. While they cook, go ahead and prepare the vegetables and other ingredients. Once time is up, take the potatoes off the stove and chill them so they don't over cook. You may want to chop the potatoes into more bite size pieces if you haven't already. Now with everything prepared place the ingredients into a large bowl and mix everything together. When the mixture of the salad is consistent, stop tossing. Place a plastic sheet or wrap over the bowl and place it in the refrigerator for a few hours or over night.
Variations
Certainly, if you enjoy the taste of a particular ingredient or spice, let's say mustard for example, feel free to add more of it. You are the one going to be eating it after all, so make the easy red potato salad recipe your own.
