Kayaking in Florida is a must. You can choose from rivers, to deep water ocean to shallow water in the Keys. I prefer the shallow water of the Key West National Wildlife Refuge because you are pretty much guaranteed to see animals and since I can't swim shallow water is always better.
I would also recommend this specific kayaking trip to anyone bringing children along.

The Wakulla River Kayaking Tour
Typically the Wakulla River is crystal clear and those kayaking can see straight through the water (about 80 feet down). If it rains the river can get muddy for a few days so try to plan your trip around the weather. During your 6-mile trip down the Wakulla River you may see alligators, turtles, snakes, fish, ducks, vultures and more.
