Italian-Style Enchiladas

Italian-Style Enchiladas


Ingredients

Hearty Meat Sauce (prepared in advance)

Twelve corn tortillas

Vegetable oil

Three cups shredded mozzarella cheese

Two cups grated parmesan cheese

Cooking Spray

Procedure

Preheat oven to 350 degrees

Prepare Hearty Meat Sauce as per recipe

Soften corn tortilla in three tablespoons of oil for two to three second. Left tortilla with a spatula and add a second tortilla underneath. Repeat with all the tortillas, adding oil as needed. Lift each tortilla individually with the spatula and allow to drain on paper towels.

Spray the bottom of a casserole pan. Put some of the Hearty Meat Sauce and some of the mozzarella cheese in each tortilla and roll them up. Cover all the tortillas with more Hearty Meat Sauce and cover that with the parmesan cheese.

Cook the casserole in the oven and cook for ten minutes or until cheese on top is melted.

Season before serving with oregano and red pepper flakes.

Excess Hearty Meat Sauce can be frozen and reused for another occassion
