Summer Recipes: Pimento Cheese Microwave Omelet

I love the taste of omelets. Omelets are great to have any time of the day. You don't have to eat an omelet just for breakfast. I love that I can cook a quick omelet in the microwave for a quick meal anytime. This omelet is a good way to use up left over fresh vegetables in your refrigerator.

Pimento Cheese Microwave Omelet: Ingredients

Pinch of chopped onions
Pinch of chopped green bell pepper
Pinch of chopped tomatoes
2 egg servings of egg beaters
1 pinch of salt substitute
Dash of soy milk
2 tablespoons pimento cheese

Pimento Cheese Microwave Omelet: Preparation

Combine the ingredients in a microwave safe cereal bowl. Cook for two minutes on high. Serve with a whole wheat muffin.

Microwave omelets - a good idea that a lot of people don't know about. When I owned a sandwich shop, I was not allowed to do any frying, so I developed several microwave omelets/scrambled eggs. Thanks.
