A Recipe for Low-Fat Buffalo Chicken Mashed
So Good You'll Wonder How You Lived Without it for so Long

This is a meal I used to eat in the cafeteria at work. All the new employees would wonder what buffalo chicken mashed was. Well, it's pretty simple. It's buffalo chicken with mashed potatoes. It sounds like an odd combination until you try it. That's when you wish you were the person who thought of it. It's so good that once I had it, I decided that I had to come up with a heart healthy way to make the stuff. So here is my own version of this recipe with almost no artery-clogging fat.Please be aware that I eat a lot, so I make a very large portion at once and just eat it for a few days straight. I am giving you the recipe the way I make it, but you can scale it down to size for your needs. I realize that not everyone eats like it's their last chance this year to grab some food. Please also be aware that the ingredients are approximated amounts and can vary based on your tastes. Feel free to alter the recipe as you wish.
Ingredients:
5 lbs your favorite potatoes
4 lbs chicken tenders
1 17 1/2 oz. bottle Texas Pete brand Buffalo Style Chicken Wing Barbeque Sauce
1 12 oz bottle Texas Pete brand Hot Sauce
1 cp your favorite fat-free blue cheese dressing
2 large tomatoes
8 stalks of celery
1 heaping tbsp minced garlic
1 heaping tbsp chopped chives
1 cp skim milk
Fat-free cooking spray
1. Thoroughly wash potatoes and cut into eighths. Place in large pot and boil for 45 minutes or until you can easily cut them with a fork.
2. Coat a baking pan in cooking spray and lay out the chicken tenders evenly so that they are not on top of each other, but rather side-by-side. Lightly cover the tenders in Texas Pete Buffalo Style Chicken Wing Barbeque Sauce with a brush. Bake at 450 degrees for 20-30 minutes or until fattest part of tender is no longer pink on the inside.
3. When the potatoes are done, add the milk, garlic, and chives and mash or whip them until there are no chunks left.
4. After the tenders are cooked, toss them in the remaining Texas Pete Buffalo Style Chicken Wing Barbeque Sauce until well coated.
5. Take the blue cheese dressing and stir in Texas Pete Hot Sauce to suit your tastes. Start with four parts blue cheese to one part hot sauce.
