South Beach Diet: Phase 2 Recipes

Here are some great phase two recipes that are sure to keep you sticking to your South Beach diet plan.

If your tired of the quiche cups and need something new for breakfast try the Fruit & Nut Oatmeal Muffins. This recipe makes 1 dozen and here's what you need:

1 cup oats
1 cup low fat buttermilk
2 egg whites
1 cup flour
1/4 cup chopped nuts
2 tbsp margargine
3 tbsp equal or splenda sugar
1tsp of baking powder
1/2 tsp baking soda

1/4 tsp of salt

Again your going to use your muffin tins so grease it up or apply your baking cups. In one bowl mix your oats with your buttermilk. Let stand for 10 minutes and all margarine and egg whites. In a separate bowl mix the rest of the ingredients. Mix both ingredients together in one bowl until the dry ingredients are moistened. Fill the muffin cups with the ingredients and bake at 400 degrees for 20-25 minutes.

For dinner try making Chicken Cordon Bleu. You will need:

4 boneless skinless chicken breasts
8 slices of canadian bacon
4oz of swiss cheese
1 tbsp virgin olive oil
1 egg beaten
3/4 cup powdered parmesan cheese

Place the canadian bacon on each chicken breast and add once ounce of swiss cheese. Roll up the piece of chicken and secure with toothpicks. Mix the olive oil and egg together. Dip the chicken breast in the mixture. Roll the chicken in the parmesan cheese and bake in baking dish for 30-35 minutes at 350 degrees.

Everyone loves pizza! Here is a tasty alternative that you can have for breakfast or lunch. What you will need:

3 teaspoons olive oil
2 ounces of spinach
2 large eggs
one whole-grain pita
1 large tomatoe thinly sliced
salt & pepper
1/3 cup reduced fat feta cheese crumbled
