I like the step by step guide you provided here, Jody, and the way you mentioned adding alternatives such as beans to your diet. I have at times considered becoming a vegetarian, but I've never actually taken that step. Sophie

This is very good advice and I am interested in doing this. I'd like to keep eggs, cheese and milk in my diet, but hold the meat. I am so upset every time a see a chicken truck going to the factory down the road from me. I feel so sorry for them. It makes me not want to eat any meat. I like the taste of meat, but my sorrow over eating another animal is getting to me bad.

Good advice! I've known "vegetarians" who skip the meat and vegetables but pig-out on Doritos... not good. My SIL makes great tofu... it's delicious! (And I'm NOT a vegetarian, but I'd eat it any day!)
