Quick Week Night Meal: Italian Chicken Dish

This healthy Italian chicken dish gets it's flavor from the heat of the cherry peppers as well as the low fat chicken broth.

If you want though, feel free to use bone in and skin on chicken thighs! Instead of 1 lb. of boneless chicken you will need 2 lbs. of bone in chicken.

Recipe calls for: 1 lb. chicken breast cut into strips, 1 green pepper, 1 medium onion, 3 -4 cherry peppers from the jar, 1 cup of chicken broth, 3 cloves of garlic sliced, and olive oil.

You can serve this Italian chicken dish with rice, pasta, or even some polenta.
